In the kitchen attention to detail is paramount - jam makers are trained by Chief Jam Maker - Production - Sheila, (pictured here above) - who has developed the range with Kathy, along with stringent systems and recipes over the past 10 years. As much local fruit is sourced as possible, including strawberries, raspberries, redcurrants and blackberries from Langham up the road; fresh SEVILLE ORANGES – as opposed to pulp or tinned fruit are sourced in January and February for our fabulously zingy and tasty selection of marmalades – and you really can taste the difference.
Bramleys which are found in many of our chutneys are grown by Jez, the apple grower in Eye, also Director of the Company. Plum Chutney is another favourite that we've been making for decades, using the definitive Laxton Cropper sourced from Cambridgeshire. It is especially good with cheeses as well as a great ingredient for other dishes, or use as a glaze on duck or chicken.

Quince Jelly – is another example of our tradition of producing unusual fruit products, but is only available from November through to December, owing to the scarcity of English quinces. Anyone got a few trees in their garden?
